The Oenology Research Unit has a long history of transferring fundamental knowledge, know-how & innovation to the Wine Industry. Its thematic scope integrates chemistry, microbiology, processes, biochemistry of grapes and cognitive sciences related to sensory analysis. With over 100 people, the Unit is organized into 3 axes “Wine quality & identity”, “Microorganisms: diversity, metabolism & selection” & “Bioactive compounds”.
