Expected Results

The identification of the characteristics of local varieties and the improvement of the quality of wines with appropriate interventions by the collaborating University bodies will contribute to the stability and the highlighting of their character.

In the viticultural sector, experimental interventions with leafing at different intensities will bring about earlier ripening & better development of aromas of the wines to be produced. In the oenological sector, natural antioxidants will improve the preservation of aromas during the conservation of wines while the use of indigenous yeast strains will increase their local character.

The wine image of the region is expected to change substantially, focusing on local identity for the benefit of productive development. The project will constitute a legacy for further development, strengthening the competitiveness of the trade name of Soufli, the Prefecture of Evros and the Region of Athina, in general, for the benefit of all businesses operating in the wider area.
